Cooking Is Easy's
Mushroom Gravy for Meatloaf

  • 1 Tbsp Butter
  • 2 Tbsp olive oil
  • 1/4 C diced onions (optional)
  • 6-8 oz mushrooms (sliced to desired size)
  • 1 Tbsp flour
  • 1 C chicken stock *
  • 1/4 C white wine (or sherry, marsala, etc)
  • 2 Tbs Heavy Cream
  • Salt and Pepper
  • 2 tsp Dried or fresh herbs** (tyme and parsley work well)

* beef stock can be used for beef dishes, but chicken stock works for any meat

** dried herbs are added during cooking, fresh herbs added only for the last minute or so

Melt butter with olive oil and saute onions for 1 minute, then add mushrooms. Add salt and pepper and saute for about 5 minutes. Sprinkle flour over mushrooms/onions and cook for about 1-2 minutes. Add wine and stock, then dried herbs and bring to a boil. After about 2 minutes the gravy should thicken. Add cream, and fresh herbs (if using). Taste and add salt and pepper if needed, to taste.
Serve over sliced meatloaf as well as other meat dishes such as turkey breast, grilled chicken breast, turkey meatballs, and others.
